Prepare To Be Delighted….

Or not!

For some of you, this is going to look like heaven. For others, well, just go ahead right now and get a puke bucket!

What do you think of when you see this?:

For me, this spells heaven. It’s potato soup in case you don’t recognize it. And it’s  super simple. So…if you despise potato soup, just say your goodbyes right now. Otherwise, stick around and I’ll try to give a recipe…such as it is with me.

I peeled and cubed about six or so potatoes and boiled them until they were tender then drained them. While the potatoes were cooking, I sauteed diced onions (from my garden, thankyouverymuch) in butter with a little ground pepper and chicken boullion.  Maybe about a teaspoon or so of each. I sauteed the onions until they were good and tender.

After the potatoes were drained I took about a third of them and put them with the onion/butter/boullion mixture. With a potato masher, I mashed them up pretty good. Then I added milk to the mashed up mixture until it was creamy. After that I put the diced potatoes into the mashed up mixture and poured milk over it till it was just barely covered. Taste it at this point to make sure it’s what you want. I added just a touch of garlic salt because I like garlic but didn’t have any on hand.

For the piece ‘de resistance, add some awesome sharp cheddar cheese and put it all in mis-matched soup bowl. YUMMY!

Oh.  And you’ll want to wash it all down with this:

At this time of year when the weather’s all cool, this is the next best thing to chili!

    • I usually put bacon in it. I fry up the bacon until it’s good and crisp and then sautee the onions in the bacon fat. Can you feel your arteries clogging yet? Then I crumble the bacon over the top of the individual soup bowl on top of the grated cheese. It is FANTASTIC!!!! I got lazy last night and didn’t feel like taking the whole three minutes to thaw out the bacon, then another ten minutes to fry it up before I could even get to he onion part.
