Food, glorious food! All day yesterday I felt like I was starving to death. I normally have breakfast at 7(ish), a snack at 10, lunch at noon, a snack at 3, dinner between 6 and 7 depending on workout schedule, and a snack around 9. I try to keep each “meal” to 400 calories or under, giving me about a 2000 calorie day.
I’ve had a pretty major project going on at work that has caused undue stress and wreaking total havoc on my normal schedule. I don’t get shit done because I get pulled away from the project for my regular job. But worst of all, it interferes with my perfectly lined out eating schedule. I was locked in an office reading/studying tax codes (not my job) and missed my 10am snack AND was late for my lunch. Then I had a meeting directly following lunch, which ran into my afternoon snack time. Then I left to go for my bike ride (12 miles, one hour) directly from work. By the time I got home I was famished and my house smelled DIVINE!!!! You know why? Because….this:
This is a pork butt. It was to become carnitas. I sprinkled ground cumin over the top of it…a couple teaspoons or so. Then really finely diced garlic. Four or so cloves. I rubbed that really well into the top of the butt. Then I squeezed the juice out of a half a lime over the top of that. Then I put about 1/3 a bottle of Herdez green salsa over the top of that. Then I spritzed the top of that with Tapatio salsa (about 2 or so tablespoons). Then I set it in the fridge so that all I had to do in the morning was put the ceramic part of the crockpot into the cooking part of the crockpot, turn it on low, and head out the door to work.
I shredded it after it was done cooking. And then…
I ate TWO!
A whole wheat tortila, refried black beans, carnitas, pico de gallo AND…guacamole!! Quite tasty. It could have been that I was starving! But I doubt it. I’m pretty sure it’d be good on an empty stomach.
